"I clipped this recipe from a local newspaper years ago but haven't made it yet. Since I now cook mostly off my computer, I'm looking forward to trying this one now. Sounds like something I will really like."

Step by Step Method

Step 1

Heat oil over medium heat in a 2 quart saucepan. Add chopped onions, then raise heat to medium-high and cook for 2 minutes or until softened.

Step 2

Add coconut milk, water, allspice and chicken bouillon. Bring to boil.

Step 3

Add rice, cover and reduce heat to low. Cook for 5 minutes.

Step 4

Remove pan from heat and stir in frozen peas. Re-cover pan and let stand 1-2 minutes or until peas are warm.

Step 5

Season with salt and serve immediately.

This is a 'fast and easy' recipe. I used full fat coconut milk as that is what I had on hand. The rice turned out nice and creamy which we love. I do think that it would benefit this dish to have some fresh ginger, garlic or chili (or all of it) as it is quite bland but has wonderful texture. Will be making again for sure!
