Step by Step Method
Step 1
Get spices ready.
Step 2
Heat olive oil in a large pot.
Step 3
Sauté the onion until soft, about 2 minutes.
Step 4
Add the carrots and celery and sauté until carrots are tender, about 8 minutes.

Add garlic, cumin, turmeric, coriander, ginger, curry powder, cayenne red pepper, salt and black pepper.

Continue to sauté for about 4 minutes.

Add the vegetable broth and lentils and stir to combine.

Stir in the shredded chicken.

Simmer on low heat covered for 20 minutes, or until lentils are tender.

Stir in the lemon juice .

Serve the soup with dill, parsley and crushed red pepper flakes to taste
