Step 1

Cut beef into 1 inch squares.

Step 2

Brown chopped onion in butter; add paprika and fry slightly; do not brown paprika.

Step 3

Add cubed beef, salt and pepper; simmer until tender in its own juices, being careful not to scorch.

Step 4

Add carrots and water and simmer until carrots are partly cooked.

Step 5

Add potatoes; cook until potatoes are done, for about 1 hour.

Step 6

Serve with dumplings if desired.

Quite tasty. The paprika and caraway add nice flavor. I made two changes--used baby pearl onions and added some diced tomatoes. I served with dumplings.
