"One of my better recipes. This isn’t diet food, but so, so good. I serve this every year at Thanksgiving for the potatoes. It’s important to take the time to cook the onions low and slow until they become very sweet."

Step by Step Method
Step 1
Preheat the oven to 350°F and coat a 9 x 13 baking dish with cooking spray. Sauté the onions in oil on low heat until they start to break down and become very sweet, 20 to 30 minutes. Do not let them turn dark brown.
Step 2
Add the diced bacon and cook until just done. Remove and chop into pieces.
Step 3
In a large bowl mix the melted butter with the potatoes, tossing the potatoes as you drizzle in the butter.
Step 4
Mix the bacon and onions with the potatoes.
Step 5
Add all other ingredients through black pepper and combine everything thoroughly.
Step 6
Spread the mixture into the prepared pan and top with the extra cheese.
Step 7
Bake at 350°F for 45 to 55 minutes until bubbling.
