Ingredients

The ingredients are:
  • 4 tablespoons olive oil
  • 2 large sweet onions, diced
  • 6 or 7 strips quality bacon, chopped
  • 40 ounces shredded potato hash browns, Simply Potatoes (2 packages)
  • 1/2 cup melted butter (1 stick)
  • 10.5 ounces condensed cream of mushroom soup (1 can)
  • 10.5 ounces can condensed cream of celery soup (1 can)
  • 1 cup heavy cream
  • 1 1/2 cups diced ham
  • 1 cup sour cream
  • 1 cup Colby Jack cheese, shredded
  • 1 1/2 cups medium cheddar cheese, shredded
  • 3/4 cup cheese for topping
  • 1/2 teaspoon kosher salt
  • 1 teaspoon black pepper

How to Make

  • Step 1: Preheat the oven to 350°F and coat a 9 x 13 baking dish with cooking spray. Sauté the onions in oil on low heat until they start to break down and become very sweet, 20 to 30 minutes. Do not let them turn dark brown.

  • Step 2: Add the diced bacon and cook until just done. Remove and chop into pieces.

  • Step 3: In a large bowl mix the melted butter with the potatoes, tossing the potatoes as you drizzle in the butter.

  • Step 4: Mix the bacon and onions with the potatoes.

  • Step 5: Add all other ingredients through black pepper and combine everything thoroughly.

  • Step 6: Spread the mixture into the prepared pan and top with the extra cheese.

  • Step 7: Bake at 350°F for 45 to 55 minutes until bubbling.
