Step 1

In large saucepan at medium heat, add bacon and grease, vinegar, Worcestershire and sugar.

Step 2

Heat for 2-3 minutes until sugar dissolved.

Step 3

Add water chestnuts and onion

Step 4

Mix.

Step 5

Pour spinach into pan

Step 6

Toss pan 30 seconds.

Step 7

Remove pan from heat

Step 8

Turn it over and pour spinach and dressing into bowl.

Step 9

Cover bowl with pan 20 seconds. Remove pan

Step 10

Add eggs

Step 11

Toss and serve hot.

A new take on a traditional spinach salad. The water chestnuts were a nice touch. We needed a little more vinegar so we added it. Important to serve immediately while still hot. Make sure you use a big enough pan to accommodate all the spinach.
