"Longganisa is a Filipino sausage link, usually served for breakfast. He has a garlicky and sweet taste to it. It is usually served with garlic fried rice (sinangag), sunny side up eggs and tomatoes. In the Philippines, it is normally in a casing, but this is an easier skinless version. From: latestrecipes.net/2010/09/14/homemade-skinless-longganisa/" with slight changes."

Step by Step Method

Step 1

Mix all ingredients in a bowl. Do a taste test first, by frying a small amount; if you’re satisfied, wrap in wax paper or plastic wrap like sausage or just shape into disc like a burger patty and store in the freezer.

Step 2

To cook, simply heat some olive oil or any cooking oil in a frying pan, and fry longganisa/sausage until it caramelizes and is browned..you’ll love the smell :)

These were yummy! I got 15 small patties from the recipe. My son came from the other side of the house to see what was cooking, because they smell amazing when they're frying. Next time I might use a little less sugar and add some fennel. For Culinary Quest 2016.
