"These really take little effort to make and taste great, however you do need a mondoline to slice them thin or of you don't own a mandoline you can use your potato peeler to create thin shaves instead of slices"

Step by Step Method
Step 1
Set the mandolin to very thin slice setting. Slice or shave the potato (see recipe description for shaving). Place the slices or shaves in the ice water for 30 minutes.
Step 2
Meanwhile, combine the paprika, cayenne, if using, garlic salt, sugar, and onion powder in a bowl.
Step 3
Heat the oil in a deep fryer or a very deep skillet to 375 degrees.
Step 4
Remove the potato slices or shaves from the ice water and dry with paper towels Then in batches deep fry the potato in the oil for about 1 1/2 minutes per batch to brown them.
Step 5
Using a large slotted heat-proof spoon remove the chips from the oil. Drain on paper towels and sprinkle with seasoning.
