Ingredients

The ingredients are:
  • 1 large potato, peeled
  • 1 quart ice water (placed in large bowl)
  • 1 teaspoon paprika
  • Small pinch cayenne pepper (optional)
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon sugar
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • Vegetable oil for deep-frying

How to Make

  • Step 1: Set the mandolin to very thin slice setting. Slice or shave the potato (see recipe description for shaving). Place the slices or shaves in the ice water for 30 minutes.

  • Step 2: Meanwhile, combine the paprika, cayenne, if using, garlic salt, sugar, and onion powder in a bowl.

  • Step 3: Heat the oil in a deep fryer or a very deep skillet to 375 degrees.

  • Step 4: Remove the potato slices or shaves from the ice water and dry with paper towels Then in batches deep fry the potato in the oil for about 1 1/2 minutes per batch to brown them.

  • Step 5: Using a large slotted heat-proof spoon remove the chips from the oil. Drain on paper towels and sprinkle with seasoning.
