Step by Step Method

Step 1

Melt the butter in a skillet over medium-high heat .

Step 2

Add the potatoes, onion, bacon bits and garlic powder; cook until the potatoes are a light golden color.

Step 3

Season with salt and pepper and serve.

This is the perfect way to use leftover baked potatoes. :)I didn't want to use bacon bits, so I fried up a few slices of bacon. After removing the bacon,the butter was added and stirred until melted.Then the onions,potatoes,garlic powder,and pepper were added and cooked until the potatoes were slightly browned.This made a great side dish to go with our Ham dinner. This is the way we have done fried potatoes for years. We normally leave the bacon grease in the pan and then add the butter and other ingredients. Thanks for posting your method!

Excellent! Funny thing is for years DH has been trying to replicate how diners cook homefries. He has tried numerous different ways and none have come close until this recipe. We both never thought of baking a potato first. Last night I baked 3 russet potatoes. DH had one and I at half of the second potato and reserved the third and half of the second potato. I stored the potatoes in the refrigerator until this evening. Next time after I bake the potatoes and let them cool enough to handle I will scoop out the flesh before I cool it in the refrigerator. I used the baked potatoes and made the recipe as directed. The potatoes browned well along with the onions and bacon. The onions and bacon enhanced the flavor of the potatoes to for a delicious side. I served them with a ham steak however they would also be good with steak or eggs. Made for Billboard tag

Queenbea my kids and hubby really enjoyed eating these potatoes.I used 6 large potatoes to feed my family and increased all other amounts, you can bet I will make this many more times, thanks for sharing your recipe.
