Step 1

Preheat oven to 350 degrees F.

Step 2

In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds.

Step 3

Add sugar and salt.

Step 4

Beat until combined, scraping bowl occasionally.

Step 5

Beat in egg and vanilla until combined.

Step 6

Beat in as much flour as you can with the mixer. Stir in any remaining flour with a wooden spoon.

Step 7

Stir in orange peel, chocolate pieces, and candied cherries.

Step 8

Place potato chips in a small bowl.

Step 9

Shape dough into 1-1/2-inch balls. Roll balls in crushed potato chips to coat.

Step 10

Place balls 2 inches apart on an ungreased cookie sheet.

Step 11

Flatten cookies with the bottom of a glass until about 2-1/2 inches in diameter.

Step 12

Bake for 14 to 16 minutes or until golden brown.

Step 13

Transfer cookies to a wire rack; cool.
