Step 1: Preheat oven to 350 degrees F.
Step 2: In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds.
Step 3: Add sugar and salt.
Step 4: Beat until combined, scraping bowl occasionally.
Step 5: Beat in egg and vanilla until combined.
Step 6: Beat in as much flour as you can with the mixer. Stir in any remaining flour with a wooden spoon.
Step 7: Stir in orange peel, chocolate pieces, and candied cherries.
Step 8: Place potato chips in a small bowl.
Step 9: Shape dough into 1-1/2-inch balls. Roll balls in crushed potato chips to coat.
Step 10: Place balls 2 inches apart on an ungreased cookie sheet.
Step 11: Flatten cookies with the bottom of a glass until about 2-1/2 inches in diameter.
Step 12: Bake for 14 to 16 minutes or until golden brown.
Step 13: Transfer cookies to a wire rack; cool.
