  • ½ cup sugar
  • ¼ teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon finely shredded orange peel
  • ½ cup miniature semisweet chocolate pieces
  • ⅓ cup finely chopped candied cherries or diced candied fruits and peels
  • 1 cup potato chips, crushed

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds.

  • Step 3: Add sugar and salt.

  • Step 4: Beat until combined, scraping bowl occasionally.

  • Step 5: Beat in egg and vanilla until combined.

  • Step 6: Beat in as much flour as you can with the mixer. Stir in any remaining flour with a wooden spoon.

  • Step 7: Stir in orange peel, chocolate pieces, and candied cherries.

  • Step 8: Place potato chips in a small bowl.

  • Step 9: Shape dough into 1-1/2-inch balls. Roll balls in crushed potato chips to coat.

  • Step 10: Place balls 2 inches apart on an ungreased cookie sheet.

  • Step 11: Flatten cookies with the bottom of a glass until about 2-1/2 inches in diameter.

  • Step 12: Bake for 14 to 16 minutes or until golden brown.

  • Step 13: Transfer cookies to a wire rack; cool.
