Step by Step Method

Step 1

Whisk together the flour baking powder, salt and herb of choice

Step 2

Cut in the butter with a fork and stir in the milk. You might need a bit more the 2/3 cup depending on type of flour. You want a light dough consistency.

Step 3

Drop spoonfuls batter into simmering broth dipping spoon into broth to loosen the dough off the spoon.

Step 4

Cover and simmer until dumplings are cooked through, about 10 to 12 minutes.

Very light, fluffy dumplings. I doubled the recipe and made them a bit bigger and cooked about 15 minutes. Used sage, chives and parsley. I had never used butter in my dumplings, just shortening, and these were richer flavored than my usual.
