Step by Step Method

Step 1

Brown lean ground beef with onions and jalapeno in a large skillet/pan with a tight fitting lid.

Step 2

Drain can of tomatoes, reserving juice.

Step 3

Add water to juice until you have 2.5 cups of liquid.

Step 4

Add garlic to ground beef mixture and stir until fragrant. As soon as you smell the garlic, add the liquid, canned tomatoes and taco seasoning. Cover and simmer for about 25 minutes or until rice is tender and most of the liquid is absorbed by the rice. Stir occasionally.

Step 5

Remove from heat. Taste, adjust seasoning with salt and pepper as needed. When it's seasoned properly, replace the cover and let it rest for 10 minutes.

Step 6

Top with shredded cheese, sliced green onions and sliced black olives, if desired.

  • Ground beef with a fat content of 15-20% works best for this dish.
  • Look for petite diced tomatoes with Italian herbs for extra flavor.

  • Substitute ground turkey for the ground beef for a leaner option. The benefit of this substitution is that it will reduce the amount of fat and calories in the dish, making it a healthier choice.
  • Substitute brown rice for the white rice for added fiber. The benefit of this substitution is that it will provide more fiber and nutrients to the dish, making it a more nutritious option.

Mexican-Style Replace the taco seasoning with 1 teaspoon each of cumin, chili powder, smoked paprika, and oregano. Add 1/2 cup of diced bell pepper and 1/2 cup of corn to the beef mixture. Top with salsa, sour cream, and cilantro.

Mexican Street Corn Salad - This creamy, spicy, and flavorful salad is the perfect side dish to complement the savory flavors of the Hamburger Taco Rice. The sweetness of the corn and the tangy lime juice contrast nicely with the savory flavors of the main dish.

Pico de Gallo: This fresh salsa is the perfect accompaniment to the Mexican Street Corn Salad. The bright, acidic flavors of the tomato, onion, and lime juice balance out the creamy and savory flavors of the main dish, while adding a bit of spice to the meal.

This was as good as I thought it would be and one of those those recipes that has me ask why did I not think of that combination. Using two of the optional toppings, the shredded cheesed and sliced green onions daughter and I enjoyed this well seasoned taco combination. Have enough left over for my lunch today and looking forward to making a lovely wrap for my evening meal.

I made this as instructed except for using green olives as hubby will not eat black olives. This was very tasty, we really enjoyed it.

We enjoyed this casserole very much. It was super easy to make. We topped our casserole with cheese and black olives. We didn't have any green onions unfortunately.
