Ingredients

The ingredients are:
  • 1-lb lean ground beef
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 jalapeno, minced
  • 1 15-oz can petite diced tomatoes
  • 1 cup white rice (uncooked)
  • 1 1-oz package taco seasoning
  • Salt, to taste
  • Pepper, to taste
  • 1 cup shredded Cheddar cheese (optional)
  • 2 green onions, sliced (optional)
  • 1 2.25-oz can sliced black olives (optional)

How to Make

  • Step 1: Brown lean ground beef with onions and jalapeno in a large skillet/pan with a tight fitting lid.

  • Step 2: Drain can of tomatoes, reserving juice.

  • Step 3: Add water to juice until you have 2.5 cups of liquid.

  • Step 4: Add garlic to ground beef mixture and stir until fragrant. As soon as you smell the garlic, add the liquid, canned tomatoes and taco seasoning. Cover and simmer for about 25 minutes or until rice is tender and most of the liquid is absorbed by the rice. Stir occasionally.

  • Step 5: Remove from heat. Taste, adjust seasoning with salt and pepper as needed. When it's seasoned properly, replace the cover and let it rest for 10 minutes.

  • Step 6: Top with shredded cheese, sliced green onions and sliced black olives, if desired.
