Step 1

Heat the butter in a large saucepan over medium heat. Add the onion and bell pepper; sauté until the onion is translucent. Add the garlic and sauté for another 1-2 minutes. Add tomato sauce, beans, herbs, and scotch bonnet (if using). Simmer for 5-10 minutes to meld flavors.

Step 2

Stir in the rice, stock or water, and salt and pepper to taste. Bring to a boil, then reduce heat to low, cover tightly and simmer for 15-18 minutes.

Step 3

Remove from heat and let set covered for another 5-10 minutes. Then stir lightly with a fork and serve.

I loved this!! I used a half can of kidney beans (left from a different recipe) and they equaled about 5 ounces. I used up all my rice - about 1/2 cup. Used salsa for the tomato sauce. We had some left-over steak that I sliced in right before serving and added some diced avocado to serve. We are snowbirds and headed back home in a couple days, so had to make a few adjustments based on what's left in the fridge!! This was great!

What a great tasting rice recipe this is. I used salsa sauce in lieu of the tomato sauce and this was awesome. This will be made again very soon!

I thought this recipe was great! It was very, very easy and tasty too! Instead of tomato sauce I used leftover spaghetti sauce, so it's great for leftovers!
