"I used to make these all the time because I could never find them freshly made. This recipe comes from a very old Italian cookbook that was given to me by my Mother. You can make as thin or as thick as you like, or even roll in poppy or sesame seeds, but the cooking time will vary. I am going to start making these again as we used to love these."

Step by Step Method
Step 1
Sift 350 grams ( 12 ounces or 3 cups) of the flour into a large bowl; keeping the remainder for the flour for kneading the dough.
Step 2
Add yeast according to packet instructions, salt, 2 - 3 (as needed ) tablespoons of the oil and milk. Knead energetically for 10 minutes or until smooth and elastic; Put into a warm place to rise for 1 1/2 hours.
Step 3
Preheat the oven to 230 degreeg C (450F or Gas8 ).
Step 4
Divide the dough into pieces and roll into long thin sticks using floured hands. Cut sticks into about 25cm or 10 inch lengths. Put on oiled baking trays and put into the hot oven until crisp and golden ~ this will take about 15 minutes but will vary according to thickness and size of the Grissini.
