Step by Step Method

Step 1

In a bowl whisk together the first 4 ingredients (-mustard) and then gradually whisk in olive oil and then the herbs.

Step 2

Prepare barbecue (medium high heat).

Step 3

Sprinkle steaks with salt and pepper and brush lightly with olive oil. Grill steaks until charred and cooked to desired doneness (5-10 minutes per side. Transfer to platter and let rest 5 minutes and then spoon herb mixture over steaks.

I cut this down to 1 serving...but cooked 2...4 ounce pieces of sirloin steaks...they came out perfect with cooking 6 minutes on each side...they were so tender and full of flavor with the herb mixture...I just used cilantro...yum...I cooked them in a cast iron skillet...made for "Billboard" tag game...

I am usually a purist when it comes to a good steak. Salt & pepper and on the grill, that's it. BUT decided to try this recipe with fresh herbs from my garden. Oh was I ever amazed at the flavour the herb mixture gave the rib eye without overpowering it! Absolutely eye rolling! I used purple lacy basil, green basil, Italian parsley and a wee bit of cilantro. I shared this steak with a friend and wished I hadn't, it was that good! Thank you Ellie for this keeper!
