"Asparagus is my new favorite vegetable and I love the zip of capers. This combination works well on the grill or can be made by broiling in the oven. I like my spears crisp and almost burnt, so adjust your cooking time to how thick the spears are and how you like them!"

Step by Step Method

Step 1

Preheat grill to medium-high heat.

Step 2

Place asparagus in a shallow dish. Add 1 tablespoon oil and 1/2 teaspoon sea salt, tossing well to coat. Place asparagus on grill rack coated with cooking spray; grill 4-8 minutes or until crisp-tender, turning after 2 minutes. (Depends on thickness of asparagus)

Step 3

Combine remaining 1/2 teaspoon sea salt, vinegar, mustard and garlic in a small jar. Shake then slowly pour remaining 2 tablespoons oil into vinegar mixture, add in capers and shake well.

Step 4

Arrange asparagus on a serving platter; drizzle with the vinaigrette, and sprinkle with basil.

I love grilled asparagus.....I too like those crispy charred pieces! I grilled these with some shrimp and scallop skewers and dinner was ready in 15 minutes. You can't beat that! Love the capers in the sauce....just make sure you have a good sharp knife because those tiny capers are hard to chop. Anyone have a trick for that? Loved the asparagus and will make it often.
