Greek Beef and Vegetable Shish Kabobs

"This is a easy and by far - one of my favorite marinades for "beef" kabobs. When I make kabobs ... I actually like to skewer most of my vegetables on separate skewers. This is because of the cooking times. I feel that cooking all the beef on skewers separate from the vegetables tend to cook better. For the beef skewers, I like to add only a thin slice of onion or maybe a red pepper between the beef, which adds a nice flavor without affecting the cooking time. Make sure to read my notes regarding cooking tips below. I finish this dish off by serving it family style over a bed of couscous or rice; and, a garnish of chopped olives and feta cheese. It is delicious and easy - just make sure to allow time for the meat to marinate. I like to use a sirloin steak for the skewers; I think that cut works best for this recipe. Prep time does not include time to marinade the beef and vegetables."

Step by Step Method

Step 1

Beef ... I prefer to marinade the beef for at least 4 hours - and up to 8 hours. Add all the ingredients for the marinade to a small bowl or measuring cup and mix well to combine. Add 2/3 of the marinade to a large ziploc bag along with the beef and onions (or peppers if you decided to use them). Seal and shake to combine. And the remaining marinade to another ziploc bag along with the vegetables, seal and shake to combine. Refrigerate until ready to use.

Step 2

Understand, that these are the vegetables I like; but you can really use any combination that you like.

Step 3

Skewer Notes ... I like to use an outside grill or grill pan; but you can also use the broiler if that is all you have. If using an outside grill, make sure to soak wooden skewers (if you are using those) in water for 15-20 minutes so they do not burn. Not necessary for indoor cooking. Skewer the meat followed by a thin onion slice (or pepper slice), and repeat; but make sure ... NOT TO OVER CROWD, you want a little space in between, so they don't end up steaming, but they actually brown. This goes the same for the vegetables as well.

Step 4

Grill the Skewers ... Make sure the grill is on medium high to high heat; you want to get a nice sear. Brush the skewers with the marinade (then discard) and season with salt and pepper. Gill on each side until golden brown. I happen to like my beef medium rare; you can always test with a thermometer if you are not sure. It should take about 4-6 minutes per side, roll them as they cook. It doesn't take long, so keep an eye on them. It really depends on the thickness of the steak. The vegetables don't take long either, not quite as long as the steak; and, I tend to roll them a bit more so they DO NOT burn.

Step 5

Garnish ... Mix the feta and chopped olives together.

Step 6

Serve ... Family style is what I prefer. Add the couscous (or rice) to a large platter and top with the beef and vegetable skewers. Finish by adding the chopped olives and Feta cheese and a drizzle of olive oil. These are delicious and easy to prepare. The entire dinner is quick cooking; it just requires a little planning ahead is all. ENJOY!
