Step by Step Method

Step 1

Peel,dice and cook potatoes until soft in center. Let cool

Step 2

Peel eggs and chop, set aside

Step 3

Mix mayo, mustard, sweet relish, onion and capers in large bowl

Step 4

Add potatoes and mix thoroughly

Step 5

Fold in gently chopped eggs

Step 6

Sprinkle with paprika

Step 7

Let sit in fridge minimum four hours or overnight.

Like others have said...this is very similar to how my Mother made potato salad...I added a bit more mayo...we really enjoyed the addition of the capers...made for "Beach Party Summer" tag game...

This is very much like the potato salad my mom made when I was growing up. She used green onions though, and no capers. I loved the capers in this. I used more mayo and mustard than called for, and this was a big hit at my house.

I've made potato salad pretty much the way my mom made it for my whole life. Decided to try something different and everyone loved it... it was nice to change things up! I wasn't sure what the family was going to think switching from dill pickles to a sweet pickle relish, but they liked it... and the addition of the capers? I felt quite fancy adding them and they were a hit. Will be more adventurous at picnics now that I've discovered another potato salad recipe that my family likes!

Thank you for sharing this lovely recipe Marra. The potato salad was enjoyed by all. Great flavor and nice textures. Can't wait to have more tomorrow. Served for our first BBQ of the year, along with burgers, hot dogs and homemade coleslaw and fresh pineapple.

Daily Inspiration

Definitely great potato salad - very similar to how I generally make it with the exception of the capers. I did substitute dill relish for the sweet and otherwise stayed with the recipe. Served with bbq'd chicken and coleslaw.
