Grandma’s Tomato Gravy
"Can you say pure Southern comfort? This gravy is great for breakfast, lunch or dinner over biscuits or toast, alongside grits, over Mac 'n Cheese, Salmon Cakes, Catfish Patties, or any other way you can think of. NOTE: You can use leftover bacon or sausage drippings to make the roux. It makes the best tomato gravy, especially when crispy bits of meat find their way into the mix. You can also add in 1 cup diced onions, 1 clove crushed garlic, and red pepper flakes, to taste, to spice it up."

Step by Step Method
Step 1
Heat oil in a large skillet, over medium heat.
Step 2
Stir in flour, and cook and stir until light brown.
Step 3
Season to taste with salt and pepper.
Step 4
Pour in diced tomatoes and 1 cup water/chicken broth, and stir well. Reduce heat.
Step 5
Pour in tomato sauce, and stir. Add in sugar, if using, and stir.
Step 6
Cover, and simmer 15 minutes, or until thick.
Step 7
Serve over hot biscuits or use any other way you want to.
