Step by Step Method

Step 1

Using a sharp knife or an electric knife, cut the corn kernels off the cob into a large bowl. Scalp only the top portion of the kernels first; then, scrape the rest of the kernel and juices off the cob with the back of your knife. (If using an electric knife, this will only be one step, making it easier.)

Step 2

Place butter in a large skillet (cast iron works great) over medium heat until melted. Add fresh corn kernels and juices, salt and sugar to the corn. Continue frying over low to medium heat, stirring often until the corn becomes somewhat thick.

Step 3

Remove from heat, and serve hot.

For a basic recipe, this is very, very good! Like Teresa, I used a can of Fiesta corn and cut down on the salt a bit in order to compensate. We love corn of any kind and have made many different fried corn recipes - but this one will be my go-to for the ease and pantry ingredients. Thanks for sharing - this one is going into my Best of 2025 file.

First time ever having fried corn...we loved it...I used a can of Fiesta Corn...I cut the recipe in half and the two of us ate the whole thing...loved the sweetness...thanks for sharing the recipe...made for "Billboard" tag game...
