Ingredients

The ingredients are:
  • 8 ears fresh sweet corn (ears of corn / corn on the cob) - can also use frozen or canned. If using canned, drain, but save a bit of the juice for cooking.
  • 1/3 cup butter
  • 1 teaspoon salt
  • 1 1/2 teaspoons sugar (may need to add a bit more depending on the type of corn you use which may not have retained its natural sweetness (aka; frozen, etc.))

How to Make

  • Step 1: Using a sharp knife or an electric knife, cut the corn kernels off the cob into a large bowl. Scalp only the top portion of the kernels first; then, scrape the rest of the kernel and juices off the cob with the back of your knife. (If using an electric knife, this will only be one step, making it easier.)

  • Step 2: Place butter in a large skillet (cast iron works great) over medium heat until melted. Add fresh corn kernels and juices, salt and sugar to the corn. Continue frying over low to medium heat, stirring often until the corn becomes somewhat thick.

  • Step 3: Remove from heat, and serve hot.
