"This is the real deal recipe from Goldilocks Bakeshop. Polvorones are probably the most beloved of Filipino treats. To be true to the original would require powdered milk of the kind used in the Philippines (Nido), buy any good quality powdered milk will suit. Nido is available on Amazon. Step by Step Method
Step 1
Toast the flour in a frying pan over medium heat, stirring continuously with a wooden spoon until light brown in color. Approximately 10-15 minutes.
Step 2
Transfer the flour to a mixer bowl with a flat beater attachment. Add the powdered milk and sugar, and mix for one minute.
Step 3
Melt the butter and margarine. Add to the bowl along with the vanilla. Mix at low speed for about one minute, until fully incorporated. Continue mixing at medium speed for 30 seconds.
Step 4
Using molds, mold the mixture into individual serving shapes.
I use a shallow 2 inch fondant cutter. Lay it on counter, press polvoron mixture into mold, patting firmly or use a tamper.
Step 5
Remove mold and transfer "cookie" to a tray. When finished, refrigerate for at least 30 minutes to set firmly.
Step 6
Traditionally, individual cookies are wrapped in pretty paper, with the ends twisted.
