"This is a great way to use up leftover roast pork. I use the drippings from the roast pork to make the gravy but you can use store bought pork broth. I serve this up with mashed potatoes so I make 2 cups of gravy to have enough for the mashers. If you are only having the hot sandwiches, 1 cup of gravy is plenty."

Step by Step Method

Step 1

Pour the dripping into a pot, add bay leaf and bring to a boil over medium-high heat.

Step 2

Meanwhile, heat the sliced pork roast in microwave for a few minutes until warm.

Step 3

Whisk together the corn starch and water and pour into the boiling liquid a bit at a time while stirring.

Step 4

Remove and discard bay leaf and remove gravy from burner.

Step 5

Heat the bun in the microwave until soft, about 25 to 30 seconds.

Step 6

Place half of a bun in each plate, top with meat and pour 1/2 cup gravy over meat; sprinkle with salt and pepper to taste.

Step 7
