"This comes from Lisa Ackerman and is found in the Special Diets for Special Kids Two cookbook. It has lots of healthy coconut oil and reduced sugar (my changes). If you don't have Stevia, use another 1/2 cups sugar."

Step by Step Method

Add liquid ingredients and stir until well mixed.

Bake for 30 minutes or until cake tests done with a toothpick. (Bake 20-25 minutes for cupcakes)
