Step by Step Method
Step 1
Preheat oven to 400 degrees.
Step 2
Sprinkle pork with salt and pepper. Cook in hot oil in a large ovenproof skillet over high heat 3 to 4 minutes on each side or until browned. Add onion and plums.
Step 3
Bake 15 minutes or until a meat thermometer inserted into the thickest portion registers 145 degrees.
Step 4
Transfer pork, onions, and plums to a serving platter, reserving the drippings in the skillet. Cover the pork loosely with aluminum foil and let stand for 10 minutes.
Step 5
Meanwhile, stir the vinegar and preserves into the drippings; cook over medium high heat, stirring constantly, 3 to 5 minutes or until slightly thickened. Remove from teh heat and stir in the thyme leaves. Slice the pork and pour over the pork and plum mixture. Serve and enjoy!
