Step by Step Method
Step 1
Put water in a medium pot and bring to a boil.
Step 2
Mash ginger root in a medium bowl with a wooden spoon.
Step 3
Add ginger, zest, lemon juice and sugar to pot.
Step 4
Stir until sugar dissolves.
Step 5
Simmer 20 minutes.
Step 6
Remove from the heat and cool completely.
Step 7
Strain through cheesecloth into a glass jar or bottle if desired
Step 8
Refrigerate syrup and use within a week.
