Step 1: Put water in a medium pot and bring to a boil.
Step 2: Mash ginger root in a medium bowl with a wooden spoon.
Step 3: Add ginger, zest, lemon juice and sugar to pot.
Step 4: Stir until sugar dissolves.
Step 5: Simmer 20 minutes.
Step 6: Remove from the heat and cool completely.
Step 7: Strain through cheesecloth into a glass jar or bottle if desired
Step 8: Refrigerate syrup and use within a week.
