"A perfect sauce for true garlic lovers. This recipe comes from a very old (Italian) cookbook. I have treasured this book ever since I was given it by my wonderful Mother as a present. Served with raw vegetables, salad of even over pasta, this is a wonderful sauce, which I am sure garlic lover's will adore."

Step by Step Method
Step 1
NOTE: This can also be made in a blender or food processor.
Step 2
Crush the garlic in a garlic crusher or pestle and mortar or alternatively chop very finely. Mix the egg yolk a pinch of salt in a bowl. Add the oil drop by drop (as if making a mayonnaise), beating constantly.
Step 3
When the sauce is thick season with the salt and pepper and stir in the lemon juice.
Step 4
Serve.
