Step 2: Crush the garlic in a garlic crusher or pestle and mortar or alternatively chop very finely. Mix the egg yolk a pinch of salt in a bowl. Add the oil drop by drop (as if making a mayonnaise), beating constantly.
Step 3: When the sauce is thick season with the salt and pepper and stir in the lemon juice.
Step 4: Serve.
