Step by Step Method
Step 1
In a saucepan over medium high heat add 1/2 cup water and the sugar and then bring it to a boil. Remove from heat and stir in the pea greens. Let stand until cool (25 minutes); strain into a small bowl and refrigerate until cold (30 minutes or up to 3 days).
Step 2
In a blender combine the snap peas and 1/2 cup water and blend at medium speed for 1 minute; pour through a fine sieve, pressing on solids to release as much liquid as possible; discard solids. Season mixture with salt. Refrigerate juice until cold (30 minutes or up to 3 days).
Step 3
To prepare each cocktail: in an old fashioned class place 2 tablespoons of he mint and 1 1/2 tablespoons of the syrup. Mash mint with wooden spoon until bruised. Add 3 tablespoons bourbon, 2 teaspoons lemon juice and 1 tablespoon pea juice and 1/2 cup ice cubes and stir. Top with another 1/2 cup ice cubes and garnish with pea blossoms, more pea greens and mint if desired. Repeat for remaining glasses.
