Step by Step Method

Step 1

Heat oven to 500 degrees F.

Step 2

Sift together flour, baking powder, baking soda and salt.

Step 3

Cut in shortening with a pastry blender until the texture of coarse corn meal.

Step 4

Using a fork, stir in buttermilk.

Step 5

Do not over mix.

Step 6

Turn out onto a floured board and knead 3 or 4 times only.

Step 7

Gently pat out to about 1" thick.

Step 8

Cut into circles with a floured biscuit cutter.

Step 9

Place a large cast iron skillet in the oven and heat about 7 min.

Step 10

Remove to stove top and melt 2 tablespoons shortening in the skillet (I use butter flavored Crisco).

Step 11

Place biscuits in skillet, then quickly turn each biscuit over.

Step 12

Return to oven, and bake until golden brown, around 10 minutes.

Step 13

You may have to do in two batches.

Excellent biscuits! I loved that they had a bit of a crispiness on the outside while the interior was flaky and oh-so-tender. These were lovely served warm with butter and honey. Thank you!

These biscuits are truly, Excellent! They came out tender, buttery, perfectly seasoned and the texture was dynomite. For the shortening, used butter-flavored Crisco throughout, but in the skillet, melted part butter-flavored Crisco and real butter. The outside came out crispy and buttery and the inside ooh-la-la tender! Thank you, Dee, for sharing yet again a Wonderful recipe.
