Step by Step Method
Step 1
In a very large container, combine navy beans, pinto beans, great Northern beans, split peas, yellow split peas, black-eyed peas, lentils, baby limas, lima beans, soybeans, barley and red beans.
Step 2
Mix well.
Step 3
Divide evenly into 14 lidded jars.
Step 4
Attach the following recipe to the jar:

Soak 2 cups French Market Bean Mix in water to cover (1 jar) for 8 hours or overnight.
Step 6
In a large soup pot, bring 9 cups water and ham hock to a boil.
Step 7
Reduce heat and simmer 20 minutes.
Step 8
Stir in soaked beans, salt, pepper, diced tomatoes and green chiles, onion and garlic.
Step 9
Bring to a boil again, skimming foam off the top. Reduce heat, cover and simmer about 1 hour, until beans are tender.
Step 10
Take out ham hock and remove bones.
Step 11
Add meat back in and season to taste.
