"If you have ever had chess pie, this is very similar with the addition of coconut. It is a very sweet pie, so a sliver is all you need, but a very different taste than a traditional cream pie."

Step by Step Method

Put sugar into a bowl. Add all wet ingredients, stirring well with each addition. Stir in coconut. Pour into pie crust, bake at 350 F for about an hour. Top will be a golden brown, and the middle of the pie should not be shaky. This pie is very good warm, but it will slice better if allowed to cool first. Easily doubles if making for a larger group of people
