Ingredients

The ingredients are:
  • 1 pie crust (unbaked, frozen or fresh)
  • 1/2 cup butter (or margarine, melted)
  • 3 large eggs (beaten)
  • 1 1/2 cup granulated sugar
  • 1 cup shredded coconut
  • 1/4 cup buttermilk
  • 1/2 teaspoon vanilla extract

How to Make

  • Step 1: Put sugar into a bowl. Add all wet ingredients, stirring well with each addition. Stir in coconut. Pour into pie crust, bake at 350 F for about an hour. Top will be a golden brown, and the middle of the pie should not be shaky. This pie is very good warm, but it will slice better if allowed to cool first. Easily doubles if making for a larger group of people
