"This can easily be adapted to whatever you happen to have in the house, since that's how I made it up. I'm sure it would also work with ground beef (omit the olive oil). Most people will probably have to add some salt, but we've been on a low sodium diet for so long that what came in the canned goods was more than plenty for us."

Step by Step Method

Step 1

Preheat oven to 350F and spray a 3-quart casserole dish with cooking spray.

Step 2

Heat oil in a large skillet: add ground turkey, onion, garlic powder and chili powder to skillet and brown (about 8 minutes). Drain any excess liquid.

Step 3

Spread about 1/3 of spaghetti sauce in bottom of prepared casserole dish. Layer, in order, pasta, meat mixture, 1/3 spaghetti sauce, kidney beans, black olives, mushrooms and cheese. Top with remaining 1/3 spaghetti sauce.

Step 4

Bake at 350F for about 35 minutes or until heated through. Sprinkle with Parmesan and bake an additional 5 minutes. Let stand 10 minutes before serving.

We really liked this casserole -- makes a lot! I skipped the mushrooms but otherwise made as directed using a bit more cheese and pasta than suggested. Very good and enjoyed by all. Thanks for sharing!

I did change two ingredients one for dietary reasons the other for what I had in the house. I didn't use rotini I served the casserole with tofu spaghetti and instead of spaghetti sauce I used a 398 ml can of Italian spice stewed tomatoes. We loved the recipe. Thanks Felix for a winner. I hope you don't mind the changes
