Step by Step Method
Step 1
Preheat oven to 180C.
Step 2
Heavily grease the base of a 18cm square slice tine, or line it with baking paper.
Step 3
Place the flour, sugar and butter in the bowl of a food processor and zoom until mixture comes together in a ball and then press this mixture into the base of the tin using your fingers.
Step 4
Bake until golden brown, about 15 minutes.
Step 5
Clean and dry the food processor and then put into the bowl the eggs and sugar and zoom until well combined and then add the lemon zest, juice, flour and again zoom together.
Step 6
Reduce the oven temperature to 160C and pour this mixture over the base and bake until just golden brown and reasonably firm when pressed with a finger.
Step 7
Cool and dust with icing sugar and when you slice it, you will find you have three delicious layers.
