"I like making these to serve as a side with a grilled steak. When slicing these make sure you don't go down to far as the potato will slip when inserting the onion pieces. Also make sure your onion slices are nice and thin."

Step by Step Method

Step 1

With a sharp knife, make cuts in the potatoes, about 1/2 inch apart making sure not to cut right through bottom of potato.

Step 2

Rub 1 tablespoon butter onto each potato and place onto a piece of foil.

Step 3

Insert onion in between potato slices.

Step 4

Sprinkle with herbs and seasonings.

Step 5

Wrap potato with foil making sure it is well sealed.

Step 6

Bake in a preheated 425 degree Fahrenheit oven for 45 minutes to an hour, depending on size of potato, until potato is tender.

Step 7

Serve with a dollop of sour cream.

Making different potato dishes is always fun and these were delicious. I baked them until they were nice and crispy on the outside. They tasted so wonderful with the pork tenderloin I made. We all loved them and my girls suggested we have these again so I added them to our menu plan.

My friend and I just loved these potatoes. They tasted so good with my pork chops. I didn't use the sour cream this time, but will the next time I make them. I cooked them at 350 for 1 hour as I was baking something else in the oven and had to have it at a lower heat. I will make these often as an option to baked or mashed. They look great too, if you are serving guests... Very attractive! Thanks for sharing Bea! Linda

I made this a couple of nights ago. We loved the onion, butter, chive flavour combo and the appearance is very attractive, too.
