Step 1: With a sharp knife, make cuts in the potatoes, about 1/2 inch apart making sure not to cut right through bottom of potato.
Step 2: Rub 1 tablespoon butter onto each potato and place onto a piece of foil.
Step 3: Insert onion in between potato slices.
Step 4: Sprinkle with herbs and seasonings.
Step 5: Wrap potato with foil making sure it is well sealed.
Step 6: Bake in a preheated 425 degree Fahrenheit oven for 45 minutes to an hour, depending on size of potato, until potato is tender.
Step 7: Serve with a dollop of sour cream.
