Step by Step Method

Step 1

Like other easy Spanish dishes with tomato Gather the ingredients & trim off any stems or blemishes at the skin of the eggplants. Cut eggplants crosswise into slices about three/8-inch thick.

Step 2

Turn on the broiler to heat. Place parts on a baking sheet and spray with oil, the use of a “mister” when you have one. If not, gently brush every slice with olive oil.

Step 3

Place baking sheets underneath the broiler on the second one shelf from the top, so that they are no longer too near, or they may burn.

Step 4

When one side is lightly browned and soft when you press gently, flip slices over, observe olive oil and go back to the broiler. Depending on your broiler or oven, the distance from the pan, it can take 20 to 25 minutes to prepare dinner. (You may find that slices which are directly underneath the broiler cook much quicker than the ones at some distance corners of the pan. Keep an eye on the pans and rotate the slices on the cookie sheet.)
