"So good and so easy! This is just delicious especially for a Sunday brunch or company. Just put it together the night before, then bake it off in the morning. Add sour cream, salsa, avocado; and maybe a fruit salad on the side - and you have a great breakfast. And don't worry, it isn't too spicy. Cooking time does not include the overnight marinating time."

Step by Step Method

Step 1

Base ... Spray an 8" square pan with a non stick spray, bottom and sides. Then, place 4 of the tortillas in the bottom of the pan, coming up the sides about 1"; and, don't worry if they overlap on the bottom of the pan, you want that.

Step 2

Cheese and Filling ... First, mix the 2 cheeses together. Then, sprinkle 1/2 cup of the cheese over the tortillas; top with the chorizo, chilies, olives, and another 1/2 cup of cheese. Finish with the remaining tortilla which is cut into 1/2" strips. Lay the strips over the top of the filling.

Step 3

Egg Mixture ... Add the eggs, milk, oregano, and red pepper flakes to a small bowl and beat well. Then, pour over the filling and finish with the remaining 1/2 cup of cheese, pressing the cheese down into the casserole. Cover with foil and refrigerate at least 8 hrs, up to 16 hrs - not much longer.

Step 4

Bake ... In a pre-heated 350 degree oven on the middle shelf, covered for 30 minutes. Then uncover, and bake an additional 15-20 minutes until a knife inserted in the center comes out clean - meaning, the eggs are set. Just like testing a cake.

Step 5

Serve ... Remove from the oven and cover with the same piece of foil you took off during cooking. You want the eggs to rest at least 5-10 minutes before cutting. Serve with sour cream, salsa, and I love to diced avocado. ENJOY! It is very simple to put together, but really good.

  • When picking the chorizo, make sure to get the right type depending on the flavor you are looking for. Mexican chorizo is soft, while Spanish chorizo is hard.
  • If you don't want the Huevos Rancheros to be too spicy, you can reduce the amount of red pepper flakes used in the recipe.

  • Substitute chorizo with vegan sausage for a vegetarian version. The benefit of this substitution is that it allows for a vegetarian version of the dish, making it suitable for those who are vegetarian or vegan.
  • Substitute pepper jack cheese with cheddar cheese for a milder flavor. The benefit of this substitution is that it will result in a milder flavor, making the dish more suitable for those who prefer a milder flavor profile.

Vegetarian Huevos Rancheros Casserole Replace the chorizo with 1/2 cup of diced bell peppers and 1/2 cup of diced mushrooms. Omit the black olives and replace the red pepper flakes with 1/2 teaspoon of smoked paprika.

Vegetarian Huevos Rancheros Burrito Bowl Omit the tortillas and layer the ingredients in a bowl instead. Start with a layer of cooked white rice, followed by black beans, diced bell peppers, diced mushrooms, diced tomatoes, and diced onions. Top with a fried egg and sprinkle with smoked paprika.

Fruit Salad with Honey Lime Dressing: This light and refreshing fruit salad is the perfect accompaniment to the rich and savory huevos rancheros casserole. The sweet honey and tart lime dressing provides a delightful contrast to the savory flavors of the dish. Plus, it's a great way to add some extra nutrition to your meal.

Cilantro Lime Rice: This flavorful rice dish is the perfect complement to the fruit salad and huevos rancheros casserole. The cilantro and lime give it a bright, citrusy flavor that pairs nicely with the sweetness of the honey lime dressing. It's also a great way to add some extra fiber and nutrition to your meal.

I served this for Brunch on Sunday. It was enjoyed by all my guests. I was concerned about making it the night before as it would have extended the 16hrs. recommended. So I prepared everything but the eggs only giving the dish 6.5hrs to sit in the frig. Next time I will leave it longer as I feel it needs more time to sit as recommended. Thank you for posting this recipe Church.
