Step by Step Method
Step 1
Chop the cabbage and place in a bowl with 1/2 teaspoon salt. Marinate for 5 minutes. Squeeze out excess water. Chop chives and carrots. Soak bean threads in water until soft, chop and set aside.
Step 2
In a separate bowl add the next 6 ingredients (green onion - salt), stir to combine until mixture is sticky. Add the vegetable mixture to the beef mixture. Stir to combine.
Step 3
To make dumplings: place 1 spoonful of filling in 1 wrapper, seal. Repeat until all dumplings have been filled and sealed.
Step 4
In a pot of boiling water, add dumplings and bring back to a boil over high heat. Add 2/3 cup cold water and bring back to a boil (third boil). Remove dumplings from heat with slotted spoon.
Step 5
A dip may be prepared using a combination of soy sauce, vinegar, sesame oil, red chili sauce, chopped green onion and minced garlic.
