Step by Step Method

Step 1

Cook the pasta in heavily salted boiling water.

Step 2

Drain, reserving 1/2 cup pasta water.

Step 3

In deep skillet, heat oil and margarine.

Step 4

Add garlic.

Step 5

Add za’atar and red pepper flakes to the pan and stir; cook one minute.

Step 6

Add cherry tomatoes to the pan and mix until they are coated in the spices.

Step 7

Let the tomatoes sit in the pan for 3 minutes or until they start to blister and pop.

Step 8

Mix the tomatoes and slightly mash any tomatoes that have not popped.

Step 9

Add salt & pepper to taste.

Step 10

Remove skillet from heat and add the pasta directly to the tomato mixture.

Step 11

Add enough pasta water to make saucy and mix until the pasta is coated in the tomatoes and spices.

Step 12

Add in the spinach and mix, letting the residual heat from the pasta and the skillet wilt the spinach slightly.

Step 13

Add lemon zest and juice; toss.

This is so good! We loved it. I doubled the recipe, cut back a little on the red pepper flakes, and used linguine instead of fettuccine noodles. Zero leftovers, full bellies, happy mama.
