Ingredients

The ingredients are:
  • 8 ounces dry fettuccine pasta
  • 6 cups water, boiling
  • 1 teaspoon salt
  • SAUCE
  • 3 cloves garlic, smashed
  • 2 tablespoon olive oil
  • 1 tablespoon margarine
  • 1 tablespoon za’atar seasoning
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper, to taste
  • 2 cups cherry tomatoes
  • 3 cups fresh baby spinach, torn
  • 2 teaspoons lemon zest
  • 1 tablespoon lemon juice

How to Make

  • Step 1: Cook the pasta in heavily salted boiling water.

  • Step 2: Drain, reserving 1/2 cup pasta water.

  • Step 3: In deep skillet, heat oil and margarine.

  • Step 4: Add garlic.

  • Step 5: Add za’atar and red pepper flakes to the pan and stir; cook one minute.

  • Step 6: Add cherry tomatoes to the pan and mix until they are coated in the spices.

  • Step 7: Let the tomatoes sit in the pan for 3 minutes or until they start to blister and pop.

  • Step 8: Mix the tomatoes and slightly mash any tomatoes that have not popped.

  • Step 9: Add salt & pepper to taste.

  • Step 10: Remove skillet from heat and add the pasta directly to the tomato mixture.

  • Step 11: Add enough pasta water to make saucy and mix until the pasta is coated in the tomatoes and spices.

  • Step 12: Add in the spinach and mix, letting the residual heat from the pasta and the skillet wilt the spinach slightly.

  • Step 13: Add lemon zest and juice; toss.
