Step 1: Cook the pasta in heavily salted boiling water.
Step 2: Drain, reserving 1/2 cup pasta water.
Step 3: In deep skillet, heat oil and margarine.
Step 4: Add garlic.
Step 5: Add za’atar and red pepper flakes to the pan and stir; cook one minute.
Step 6: Add cherry tomatoes to the pan and mix until they are coated in the spices.
Step 7: Let the tomatoes sit in the pan for 3 minutes or until they start to blister and pop.
Step 8: Mix the tomatoes and slightly mash any tomatoes that have not popped.
Step 9: Add salt & pepper to taste.
Step 10: Remove skillet from heat and add the pasta directly to the tomato mixture.
Step 11: Add enough pasta water to make saucy and mix until the pasta is coated in the tomatoes and spices.
Step 12: Add in the spinach and mix, letting the residual heat from the pasta and the skillet wilt the spinach slightly.
Step 13: Add lemon zest and juice; toss.
