Double The Streusel Coffee Cake

"I found this recipe on another site,and the lady by the name of Hazeleyes gave me permission to post the recipe here.I sure hope you enjoy it as much as I have.The recipe name is hers but I changed the directions a bit to make it easier. Step 1

Preheat oven to 350 degrees.

Step 2

Mix together streusel ingredients and set aside.

Step 3

In a large bowl, sift together the flour, baking powder and salt then add the sugar.

Step 4

Blend the 1/4 cup oil into the flour and sugar mixture until it is like cornmeal texture.

Step 5

In another bowl, combine the egg, milk and vanilla.

Step 6

Add to the flour mixture and with an electric mixer on low,mix until just combined.

Step 7

Pour 1/2 mixture in a greased 8x 8 inch pan.

Step 8

By teaspoonfuls,dot half of streusel ingredients over batter.

Step 9

Pour remaining batter on top of the streusel,then by teaspoonfuls dot remaining streusel topping over the batter.

Step 10

Bake in a 350 degree oven for 25 minutes.

My family and I really enjoyed your coffee cake shapeweaver. My daughter who is 14 made this cake for us and it was easy to follow, all ingredients were accessible and in my pantry. We were all very pleased with the results. It has a great crumb. Next time though we will double the amount of streusel as we LOVE streusel. Thank you shapeweaver for sharing.

OMG - wow!! I made them into 9 muffins and they were the best thing I've had in quite a while. I couldn't wait to have another. I really can't say enough about how great these are - I actually started a best of 2014 cookbook to put them in. Will make often I'm sure. Thanks Chef Shapeweaver!
