Step by Step Method
Step 1
Wash lettuce and tear into large pieces.
Step 2
Rub garlic halves around the inside of a large wooden salad bowl, and discard garlic.
Step 3
In bowl, combine lemon juice, oil, mustard and pepper.
Step 4
Add egg yolk and mix well.
Step 5
Add lettuce, croutons and Parmesan, and toss lightly.
Step 6
Top with additional Parmesan if desired.
