Step 1

Heat oven to 400 degrees F.

Step 2

Meatloaf: Place the ground chuck with the onions, celery, garlic, Worcestershire sauce, eggs and salt and pepper in a large bowl.mix.

Step 3

In a separate bowl, soak the bread cubes in milk until soft. Add cubes to the ground chuck mixture.

Step 4

Place meatloaf mixture in pan. Drape the bacon slices over the top of the meatloaf.

Step 5

Bake for 30 minutes at 400 degrees F. Reduce heat to 350 degrees F and continue to bake for 40 minutes.

Step 6

Southern Glaze: Combine all the ingredients. Brush the top and sides of the meatloaf with the mixture and bake an additional 5 minutes to set glaze. Remove from the oven and allow to set for 10 minutes before slicing.

Step 7

Sautéed Vegetables: In a heated sauté pan, add the butter and diced vegetables and lightly sauté. Keep warm until assembling dish.

Step 8

Rosemary Gravy: Prepare the brown gravy mix according to package directions. Add garlic and rosemary. Simmer to combine flavors.

Step 9

Fried Shaved Onions: Toss onion shavings in a mixture of flour and seasoned salt. Deep fry until golden brown.

Step 10

Mashed potatoes: combine all ingredients.

Step 11

To serve: place mashed potatoes in the center of each plate. Arrange the meatloaf on top of the mashed potatoes.

Step 12

Ladle the Rosemary Gravy over the slices of meatloaf.

Step 13

Top with the Sauté ed Vegetables and the Fried Shaved Onions.

No special items needed.



All the different parts of this recipe were very good. I ran out of steam before I did the mashed potatoes and used some we always keep in the fridge for emergencies. We put them on the plate that was listed in the last step and it make a delicious dinner. This is a very time intensive recipe.
