Step by Step Method

Step 1

In a bowl, mash hard boiled egg yolks and add rest of dressing ingredients, starting with 1 tablespoon of mustard and adding more if needed to taste.

Step 2

Add chopped egg whites and potatoes.

Step 3

Season to taste. (It had more salt and mustard.)

We love egg salad, so seeing the amount of egg yolks worked into the dressing, I knew this was right up our alley. Good stuff. I did adjust the amount of seasonings to suit our tastes, but otherwise followed as directed. Bookmarking this one for a do-again, especially for this summer to serve with our bbq.
